Pizza Flour W Strength: Why It Is Not Protein Percentage
W describes flour strength in an alveograph testing context. Protein percentage describes how much protein the flour contains. They are not the same measurement, and you cannot reliably convert one into the other with a simple equation.
Use the flour maker’s technical sheet if a recipe calls for a W range. The master calculator handles ingredient quantities, but does not derive flour strength or guarantee a fermentation duration from protein.
Read the values together
Caputo’s Pizzeria 1 kg page gives W260–280 alongside 12.5% protein and P/L0.50–0.60. The separate fields describe different aspects of that product. P/L relates to resistance and extensibility in the test context; a W number alone does not tell you everything about shaping behavior.
AVPN’s 2024 flour specifications list W250–320 and a separate P/L range for the stated flour context. Do not substitute an old W range copied from another page without checking the current source.
These are specific source examples. Neither establishes a universal table mapping “W300 = 72 hours” or “13% protein = W350.” Flour, water, temperature and the fermentation workflow all need to be considered.
Match the flour to a complete process
If a recipe uses a long refrigerated schedule, start with the flour it recommends or a manufacturer-supported alternative. If a dough resists stretching, consider recent shaping and insufficient rest alongside flour choice. Higher reported strength is not automatically better for a short, easy-to-stretch workflow.
For a Biga, check both the recipe’s flour advice and how the matured preferment incorporates during final mixing. Do not choose a flour only because a larger W number seems more suitable for every preferment.
What to record when changing flour
Keep the water ratio, salt, yeast, dough portion size and schedule fixed for the first comparison. Measure final dough temperature and note the mixing method. Record whether the ball held shape and how it stretched after the same covered rest.
If a second trial changes hydration, write that separately. Otherwise you may attribute improved handling to a W difference when the water change was substantial. A 5-point hydration increase adds 50 g water for every 1,000 g flour.
When you only have a supermarket label
Use the product’s recommended recipes and your own repeatable observations. A missing W value is not a reason to invent one or reject the flour outright. It is a limit on how precisely you can compare technical specifications.
The 00 versus bread-flour guide helps read category labels. If the immediate problem is resistance at shaping, consult snap-back troubleshooting before replacing the flour.
