Forward and reverse calculations
Rectangle area = inside length × width. Round area = π × (inside diameter ÷ 2)². Forward: dough weight = area × factor. Reverse: factor = total dough weight ÷ total area of all identical pans.
Example: a 10 × 14 inch pan has 140 in² area. At your chosen 0.12 oz/in², it takes 16.8 oz, or 476.27 g. Two pans take 952.54 g. Reverse mode with that total weight and two pans returns the same factor.
A loading measure, not finished height
Thickness factor means mass per area. It does not predict crust height after proofing and baking or account for deep sidewalls. Measure consistently and compare your own results. One ounce is exactly 28.349523125 g and one inch is exactly 2.54 cm.
