Read percentage and grams together

At 21°C and four room-temperature hours with no cold stage, the inherited model returns 0.5625% instant yeast: 2.8125 g for 500 g flour. This is a worked software-model result, not a validated four-hour recipe for every dough.

What changes the estimate

Room hours, room temperature, refrigerated hours and yeast type affect the model. The cold weighting and temperature curve are house software assumptions. Salt, sugar, strain, flour, cooling and acidity are not modeled. Details and bounds are on the methodology page.

The tool’s conventional conversions are IDY × 1.25 for ADY and IDY × 3 for fresh yeast. Manufacturer advice can differ; Red Star permits 1:1 substitution of its dry types in traditional methods. Sourdough has no fixed equivalent commercial-yeast conversion.
