The formula behind the result
Straight dough: water = 3 × target − flour − room − friction adjustment. With preferment: water = 4 × target − flour − room − preferment − friction adjustment.
The initial example is 3 × 24 − 21 − 21 − 3 = 27°C (80.6°F). With a 21°C preferment, the four-factor example gives 30°C. Friction is an explicitly assumed example; calibrate it for your process.
Measure after mixing
This conventional calculation is not a mass-weighted thermal model. The friction adjustment depends on mixer, speed, time and batch. A Celsius difference converts to Fahrenheit by multiplying by 9/5; it does not receive a 32-degree offset. These formulas do not guarantee fermentation readiness.
