00 Flour vs Bread Flour for Pizza: Read the Actual Product
“00” and “bread flour” are not interchangeable strength measurements. Read the actual product’s specifications and intended use. A 00 label alone does not tell you its protein percentage, W value, whether it is malted or how it will behave in your dough.
The master calculator scales the chosen formula; it cannot infer absorption or fermentation tolerance from a bag label. Start with a recipe suited to your flour and oven, then compare products while keeping the process clear.
A product example, not a category rule
Caputo’s Pizzeria 1 kg product page lists type 00, protein 12.5%, W260–280 and P/L0.50–0.60 separately. Those values belong to that product. They demonstrate why flour classification, protein quantity and measured dough behavior should be read as separate information.
AVPN’s current regulations also specify flour types and technical characteristics within their own production context. That does not make every 00 flour an AVPN match or every bread flour unsuitable for pizza.
Ask what the recipe needs
Check whether the recipe is intended for a short high-heat bake, a longer home-oven bake or a pan. Note the flour product, water ratio and mixing method it was designed around. If you substitute another flour, treat its hydration as a trial rather than assuming the old water amount is ideal.
Check the ingredient list for malted flour or other additions before adding a separate malt product. Do not assume all 00 flour is unmalted, or that all bread flour needs extra sugar. Product labels answer these questions better than the category name.
Run a useful flour comparison
Use the same portion mass and target diameter. Initially keep hydration and salt constant so the flour change is visible. Record whether mixing reached a workable dough, whether it relaxed, and whether you needed extra dusting to shape it.
If one flour cannot be handled at the same hydration, a second comparison can adjust the water. Label that trial as an adapted recipe comparison; it is no longer flour alone. The home-oven hydration guide helps organize those changes.
When a strength number is missing
Do not invent a W rating from protein percentage. Follow the flour maker’s recipe or technical advice and keep batch records. Protein can be one clue, but it does not replace a functional test or establish an exact fermentation duration.
Use W strength for the measurement distinction. A flour that shapes reliably and bakes well in your setup is a useful choice even if another category has a stronger marketing association with pizza. Avoid changing flour, yeast and hydration together unless you are intentionally switching to a different complete recipe.
