Poolish vs Biga for Pizza Dough: Choose a Mixing Workflow
Poolish is a liquid commercial-yeast preferment, commonly made with equal flour and water by weight. A Biga is a stiffer preferment; the calculator uses an editable 45% hydration example. Neither method chooses the pizza style or imposes a universal bake temperature.
Choose by the workflow you want to manage. The Poolish calculator and Biga calculator allocate ingredients into a preferment and the final mix using the same total-flour baseline.
Compare the same flour allocation
For 1,000 g total flour, prefermenting 30% means placing 300 g flour in either method. At 100% hydration, the Poolish contains 300 g water. At 45%, the Biga contains 135 g water. At a final 65% hydration, total water is 650 g, so the final addition is 350 g with Poolish or 515 g with Biga.
| Example | Preferment flour | Preferment water | Fresh flour added later | Fresh water added later |
|---|---|---|---|---|
| 30% Poolish, 100% hydration | 300 g | 300 g | 700 g | 350 g |
| 30% Biga, 45% hydration | 300 g | 135 g | 700 g | 515 g |
Yeast and other ingredients are excluded from this comparison table. The complete calculators include their mass in the recipe denominator.
Handling differs before the final mix
A liquid preferment can be stirred into the final dough water. A stiff preferment needs to be distributed through the mix; break it up and follow the recipe’s mixing method. Keep both covered and allow space for expansion.
Use the preferment when it is mature according to the recipe’s cues rather than at an identical elapsed hour just because the flour allocation matches. The technical reference describes maturity as something to observe. Inoculation, temperature and consistency affect the workflow; changing all three makes a comparison difficult to interpret.
Percentage labels can mislead
“30% Poolish” can refer to prefermented flour or the mass of the wet preferment. Those are different quantities. Here it means 30% of total flour is in the preferment. The Poolish allocation guide works through the distinction.
Biga hydration is another independent percentage. A “50% Biga” flour allocation does not mean the Biga itself is 50% water. Read Biga percentages before copying a formula.
Keep claims proportional to the evidence
Preferments offer another way to organize fermentation and flavor development. They do not automatically make pizza healthier or easier on the gastrointestinal system. Compare your own mixing, shaping and baked result while holding the final recipe constant. If direct dough already fits your schedule and gives the result you want, a preferment is optional.
