- For Round Hand-Stretched Pizzas: Multiply the number of pizzas by the individual dough ball weight. For example, to make 4 Neapolitan pizzas at 250g each, your total dough batch weight is
4 × 250g = 1,000g. - For Pan Pizzas (Detroit, Sicilian, Roman): Use the Thickness Factor (TF) formula:
Dough Weight (oz) = Pan Length (in) × Pan Width (in) × TF. For a 10×14" Detroit pan with TF 0.14, you need10 × 14 × 0.14 = 19.6 oz (~555g)of dough.
Once you know total dough weight, calculate individual ingredients using Baker's Percentages:
Flour Weight = Total Batch Weight ÷ (1 + Hydration% + Salt% + Yeast% + Oil% + Sugar%)
