Why We Built Pizza Dough Calculator
Every passionate pizza maker reaches a pivotal moment: moving beyond measuring cups and volumetric spoons toward grams, digital scales, and Baker's Percentages.
However, when transitioning to authentic fermentation methods—like a 100% hydration Poolish, a 45% dry Biga, or cold fermenting a batch of 6 high-hydration Neapolitan dough balls over 48 hours—the math quickly turns into tangled spreadsheets or scribbled notebook margins.
Most online pizza calculators were either cluttered with intrusive popup ads, locked behind paywalls and subscriptions, or lacked essential features like two-stage preferment split weights, Desired Dough Water Temperature (DDT) calculations, and Pan Thickness Factor (TF) geometry.
We decided to build the calculator we always wanted: clean, lighting-fast, scientifically accurate, and completely free for the global pizza community.

The Four Pillars of Great Dough
1. Authentic Baker's Math
In baker's percentages, total flour is always 100.0%. Hydration, salt, yeast, oil, and malt are calculated relative to that baseline. This allows recipes to scale seamlessly from 1 small test pizza to 100 catering dough balls without altering dough behavior.
2. Two-Stage Preferments
Preferments like Poolish and Biga impart incredible aroma, extensibility, and blistered cornicione structure. Our calculation engine computes exact Day 1 preferment amounts and deducts them automatically from Day 2 final flour and water requirements.
3. Thermal Control (DDT)
Fermentation rate is fundamentally driven by temperature. Our integrated Desired Dough Temperature engine calculates the exact target water temperature based on room ambient, flour temperature, and mixing friction factors.
4. Pan Volumetric Sizing
Whether baking a crispy Detroit deep pan in an 8×10 steel tray, a Grandma square, or a Roman al Taglio sheet, our Thickness Factor (TF) algorithm computes the exact gram weight needed for your specific pan dimensions.
How The Calculation Engine Works
Behind the sleek interface lies an artisan baking formula engine adhering to strict mathematical standards:
Batch Total & Total Flour Derivation
From the total number of dough balls ($N$) and target ball weight ($W$), we compute total batch dough mass. Using the sum of all baker's percentages, we derive the exact base flour weight:
Total Flour = Total Dough Mass / (1 + Hydration% + Salt% + Yeast% + Oil% + Sugar%)Ingredient Scaling
Every supporting ingredient is computed directly from base flour. Water, salt, yeast, olive oil, and diastatic malt are scaled to 0.1g precision.
Water Mass = Total Flour × Hydration% | Salt Mass = Total Flour × Salt%Preferment Split Deduction
When Poolish (100% hydration) or Biga (45-50% hydration) is active, the engine isolates the preferment flour portion, calculates the preferment water and starter yeast, and subtracts them from the main mix:
Final Mix Flour = Total Flour - Preferment Flour
