1. The 100% Flour Baseline Principle

In standard culinary recipes, percentages represent a share of the total finished dish (e.g. 20% of a 100g salad). In commercial baking and artisan pizza, Baker's Percentages work differently:

Every other ingredient (water, salt, yeast, oil, sugar, malt) is weighed and expressed as a direct percentage of that flour baseline. Because secondary ingredient percentages are added to the flour, the total recipe sum will always exceed 100% (typically 160% to 185%).

2. How the Formulas Work Mathematically

When formulating a dough batch of known total mass (or target number of balls and ball weight), our engine derives every ingredient using standard baker's algebra:

Compute total desired dough mass from dough ball count ($N$) and target ball weight ($W$):

Total Batch Mass = N × W
